Good morning all hope that you have had a great week.  The weather here has been great except we are in for another cold front, it started yesterday.  Just hope it doesn't kill any more of my plants.
 
Boy this has been a week for me....can't imagine what will go wrong next.
 
Last Saturday, I attended the Dioceses of Central Florida 40th Annual Convention in  Winter Park.  I wish I could say that I enjoyed it but that would not be the case.  Our Bishop is slowly getting his way with the whole Dioceses and soon we will not have any free thinking Priest here.  Sad, really sad.  The only funny thing that happened is a resolution was brought in front of us for funerals for our beloved pets.

Now I am sure it is already done in some way but nothing formal, this would make it formal.   Thank goodness it was turn down.  This one Priest said you mean I have four funerals before the end of January and if this is past I may have 10 pet funerals.  Oh well I guess you had to be there.
 
When I came home on Saturday evening I got the news that after 29 years NASA is not going to support our training program.  What a blow, we have already signed contracts with the Holiday Inn and speakers...NASA people knew in November they were going to have to cut some where,  I guess they just decided on Friday that we would be one of the cuts.   The good news is we have met with the Holiday Inn and they are going to work with us.  So hopefully it won't be as disastrous as we thought it would be.
 
On Sunday, Diana and I went for a visit with Dad.  Thank goodness the weather was great and she was able to give Cisco his bath.  We went to the Olive Garden for dinner and really enjoyed our meal.
 
On Monday, I attended my County Meeting in Viera.  Several years ago a Citizen Resource Group was set up to study the main road from the Barge Canal to Kennedy Space Center.  We met for over a year and came up with many things...such as sign's how big they were to be, what kind of lighting and how far they will sit back from the road.  Well the draft was approved by the County Commissioners and it was sent to the powers that be at the Capital and it was approved there.

Now to make our suggestion part of the road it has to be put in the ordinance.   That is what we had on Monday evening except they were including the whole road which runs right through Merritt Island's busiest parts and they certainly are not going to be happy with our sign ordinances.  Thankfully after much debate I was able to table it until next month so those people that served on that committee can come and tell them their intentions...WOW
 
Don't know if you are going to a football party this week end of not but a friend of mine asked for suggestion as to what to take and this came to mind right away.
 
TACO CHEESECAKE
  • 3 teaspoons cornmeal
  • 3 packages (8 ounces each) cream cheese, softened
  • 60 1 envelope taco seasoning
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 2 eggs, lightly beaten
  • 1 cup (4 ounces) shredded pepper Jack cheese
  • 1 can (4 ounces) chopped green chilies, drained
  • 1/2 cup chopped ripe olives
TOPPING
  • 1 cup (8 ounces) sour cream
  • 1/4 cup sliced ripe olives
  • 1/4 cup sliced green onions
  • 1/4 cup sliced cherry tomatoes
  • 1 jalapeno pepper, sliced*
Assorted crackers

Sprinkle bottom of greased 9-in. spring form pan with cornmeal; set aside. In mixing bowl, beat cream cheese until smooth. Add the taco seasoning, sour cream and salsa. Stir in the eggs, pepper Jack cheese and chilies. Fold in olives. Pour over cornmeal. Place pan on a baking sheet.
Bake at 3500 for 30-35 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool for 1 hour. (Top of cheesecake may crack.) Refrigerate overnight.  Remove sides of pan. Spread sour cream over top and sides of cheesecake and garnish.
 
It is great, hope you try it, if you like toco's you will love this dip.
 
For most of the week Bill has really been under the weather, but seems to be feeling better.
 
Last week we called Uncle Gib and he seems to be doing fine in his new home.  Hopefully, this dummy will remember to bring Aunt Ruby's number today and we will call her.
 
Sorry to say no picture this week...will really have to work on that one for next week.
 
Want to wish Jeri (:) a very happy Birthday she certainly can't say I missed her this year.  Hope it is a great Birthday dear Jeri.  Also next week Uncle Gib will celebrate his 81st birthday, wishing you the best!
 
Had lunch with my friend Karen this week we shared the sorrow of losing a great County Manager.  Very disappointed about how things are going in the County.
 
Thank goodness my family all are well and as happy as can be expected hope it is the same for yours.
